Description
This is a premium high-altitude organic White tea from the Jun Chiyabari teafarm in the Dhankuta region in Nepal.
It is a nice complex tea that start out with a soft, floral flavor in the first brew, gets richer and bolder in the second brew and brings hints of a Darjeeling tea in the third and fourth brew. The later brews leave a slight bitterness and astringency on the tongue which add to the complexity.
We love how we are taken on a small tasting journey every time we drink it and we therefore often comes back to this tea whenever we want to satisfy our taste buds.
The teafields are located at 1800-2200 meters and only the young tender leaves are used for this tea.
Be aware that we recommend to brew this tea at 75 degrees which is a bit lower temperature than we normally use for a White tea. Higher temperatures will bring out more bitterness in the tea
It is harvested in the early spring and has a wonderful aroma and taste with fresh notes of dried fruit and a long aftertaste lingering on the tongue. It is a flavorful tea that reflects the pure environment of the Himalayas where it was born.
When brewing the tea please keep an eye on the temperature and steeping time. We recommend to brew this tea at 75-80 degrees and steep it for 45-60 seconds. Longer steeping time will bring out some bitternes but if avoided this nice tea can be brewed 4-5 times with good flavor.
